Total making time: 15 minutes
Serves: 3 people
Ingredients:
One head of Kale
One Avocado
1 Tablespoon Apple Cider Vinegar
2 Tablespoons of Flax Oil
3 Tablespoons of Liquid Aminos (or Coconut “Soy Sauce” or 1 teaspoon of himalayan salt)
4 Tablespoons of Nutritional Yeast
4 Tablespoons of Sunflower Seeds
Action:
1. Tear the kale off from it’s stem and place in a large bowl. Tear the kale into small pieces.
2. Massage the avocado into the kale.
3. Add the rest of the ingredients and stir! And it is ready!
SUGGESTION:
+ Of course add more of any of the ingredients if you like the taste!
+ Add the salad to brown rice wraps for a delicious Salad Wrap!
+ Add more nutritional yeast if you like it ‘cheesey’
+ Add 1 teaspoon of garlic powder for more flavor!

Now, most of us here in Heartwood have experienced these treats Christina whips up to keep us all healthy, and these are our favorite. Christina made these while we traveled, and here’s her recipe …
Note: Pecans should be soaked and dehydrated if possible – Almonds should also be soaked.
In your VitaMixer, turn these into a nut-powder consistency
1 Cup Pecans
1/3 Cup Pumpkin Seeds
1/3 Cup Sunflower Seeds
1/3 Cup Almonds

Grab a bowl, and put the nut powder in, then add and mix by hand:

1/4 Cup Raw Organic Cocoa Powder
2 Tbsp. Organic Maca Powder
5 Tbsp. Organic Coconut Palm Sugar
1/4 Tsp. Vanilla
1 1/2 Organic Raw Cocoa Nibs
1/4 Tbsp. Himalayan Pink Salt
1/2 Tsp. Cinnamon
1 Tbsp. Xylitol
10 Drops Stevia
1/4 Cup Organic Coconut Oil

Mix it until it’s sticky and add 2 tbsp. Organic Chia Seeds and hand form balls. You can stick a Goji Berry in each one for color and a yummy extra.

Stick in the fridge or you can freeze them. Energy!!! a wonderful Boost! Drop your chocolate bars, and try these!

IMG_2296  While visiting Sea Island with Christina and her family, I was lucky enough to get to watch Christina IMG_2299make (and EAT) her yummy Raw Berry Pie.  Okay, this pie is amazing, so expect to eat more than one piece, but if you have more willpower than I do, it’s a suitable freezer item for storage for those sweet cravings with that Superfood edge.  These can also be made as individual servings in cupcake tins or ice cube trays for bit sizes.  So healthy and palette cleansing.  Enjoy!

 Note: We used a Vitamix to make this one since we didn’t have a food processor, which would be a little easier for the crust.  We also used a new brand we found at the local health food store, Sunfood! 

 Another Note: Prepare nuts by soaking prior to use.

CRUST:
1 CUP mixed organic Pecans, Walnuts, Almonds and Rolled Oats
1 Tbsp. Organic Maca Powder
1 Tbsp. Organic Raw Cocoa
2 Tbsp. Organic Coconut Sugar
2 Tbsp. Organic Chia Seeds
1/2 Tsp. Cinnamon
1/2 Cup Organic Dates or Raisins
IMG_2208Keeping it on low speed, blend until dry crumbly.  When it gets to this consistency, then add 4 Tbsp. melted coconut oil to the mix and smoosh it all evenly into your pie plate 🙂  Go ahead and stick it in the fridge until we are ready for it.

FILLING:
1 Cup soaked organic cashews
2 Cups mixed berries (We used organic frozen mixed berries)
10 Drops Stevia
2 Tsp. Xylitol
3/4 Cup Organic Coconut Oil

Blend it all, and fill your crust! Sprinkle with Raw Cocoa Nibs.  Refrigerate to set.

YOGA DETOX RETREAT

 Is is time to retreat and give your body and soul time to restore?  

We have a revitalizing program for you, including cleansing foods, Yoga, sauna, nature, and relaxation.  We will immerse ourselves into the Body Ecology diet principles on Saturday with yummy and nurturing veggies coming from our garden, and on Sunday, will be a nurturing one day liquid cleanse that you could do once a week or anytime you get out of balance.

  •  We will do yoga at different parts of the day, including Vinyasa, Yin, meditations.
  •  Hike into nature to connect on a deeper level.
  •  hot tub, sauna, body treatments
  • optional Thai bodywork and traditional massages
Sometimes, getting away, to a wonderful environment is just what we need to transform our bodies and minds.
In a high stress world, it is important to slow down, reevaluate our habits, and set some healthy ones.
Not having to cook for yourself is a highlight in retreat which gives you more time for relaxation. Be prepared to feel rejuvenated as we scrub our bodies and minds to get polished up for the summer!
